Until what temperature can I sous vide the meat in their own packaging?
Our packaging is sous-vide ready (the process of cooking meat in their packaging in hot water for a prolonged time) for water temperatures up to 95°C (200°F). We do not recommend temperatures close to the boiling point but temperatures around 60°C (140°F) with a cooking period between 45 minutes and 3 hours, depending on the type and thickness of the meat.

Organs are extremely nutrient and vitamin dense - we all know that - but just a tiny fraction of us dare to actively eat organ meat due to misconceptions, unawareness, or simply because we don't like the taste or the thought of it. Our ground lamb can be eaten as is or mixed with regular ground meat. It's versatile and can be arranged in ways that even kids or those reluctant of organ meat can enjoy it.

Great for its nutrition and flavor

This is my most favorite ingredient for enhancing the nutrition, flavor and texture of meatloaf and meatballs while providing for a little more volume when combined together with a portion of ground meat (I use a beef-pork mix), finely diced and sautéed onion, mushroom, broccoli + α, spices, hemp or chia seeds, and an egg. It’s always good to have a pack or two in the freezer at all times. The distinctive but delicate taste can enhance so many dishes.
