Until what temperature can I sous vide the meat in their own packaging?
Our packaging is sous-vide ready (the process of cooking meat in their packaging in hot water for a prolonged time) for water temperatures up to 95°C (200°F). We do not recommend temperatures close to the boiling point but temperatures around 60°C (140°F) with a cooking period between 45 minutes and 3 hours, depending on the type and thickness of the meat.

These are fine cubes made from the shoulder and leg of lamb. The perfect cut for juicy lamb stew. These cubes are extremely versatile, and when cooked right they are surprisingly tender and come with rich marbling and a great balance of fat to meat ratio. These will give you and your family a gorgeous and memorable lamb experience. You get 300g (10.58 oz.) of cubes/dices. We recommend these cubes for slow cooking/pressure cooking such as stews. Highly recommended.

Perfect for Lamb Curry

I've been searching for lean lamb for a curry recipe for about 6 months. These lamb chunks hit the spot perfectly and make a very tender curry. I shall be recommending them in my cooking classes. Previously, I'd used lamb from my local Japanese supermarket and it had been far too fatty, the resulting curry was quite unpleasant.

This does not have a strong smell, and has wonderful taste.

Lamb curry

This lamb is full of flavour, made a curry base from scratch (cummin, garam masla, chilli, ground coriander, cardamon) onions garlic and lamb, satoimo. Slow cooked in the oven for 3 hours after seering the meat. Added coconut cream and served, if I added all of the blood and meat juices from the pack as it gives it more flavour.

Translated from Japanese: It’s said that stewing is good, so I cooked it in a thermal cooker. I baked it first, cut it into small pieces and put it in with vegetables.
It was tender and delicious.
