Until what temperature can I sous vide the meat in their own packaging?
Our packaging is sous-vide ready (the process of cooking meat in their packaging in hot water for a prolonged time) for water temperatures up to 95°C (200°F). We do not recommend temperatures close to the boiling point but temperatures around 60°C (140°F) with a cooking period between 45 minutes and 3 hours, depending on the type and thickness of the meat.

This product may weigh more than the listed weight. Please note that the weight may vary and be larger by 100g~500g.

A whole free-range farmed turkey from New Zealand. 3.2kg (7lbs) this bird is large enough to feed at least 4-6 heads. For your celebrations with family and friends use only the best, safest, and highest quality available. Turkey meat is known for its high protein low-fat values. If you are looking for the highest quality of free-range turkey - this is what you are looking for. Each turkey contains about 35% breast meat which is a great value for money. This turkey is not braised or has been injected with brine solution.

New Zealand free-range, and open pasture-raised white turkey - probably the first in Japan. The free-range turkeys spend their days roaming around fresh green paddocks, pecking and nibbling away as they explore the farm as nature intended. At night the turkeys are moved into the sheds to prevent exposure to harsh weather conditions and protect them from predators. It goes without saying that the birds were never treated with antibiotics or growth hormones. Compared to factory-farmed conventional turkeys, our turkeys are raised for 3 weeks longer.

The farm is called Canter Valley and is a real family-owned business run by Locky and Kathy located in North Canterbury, New Zealand. The welfare of the turkeys is a top priority and the family farm maintains the highest level of farming practices. They hold certification for free-range animal welfare practices and are certified by FREPNZ (Free Range Egg and Poultry New Zealand).

About Brining: As the turkey is all natural and unprocessed, we highly recommend brining it before cooking to make it extra juicy and tender. To brine, submerge the half-frozen whole turkey in a large container for 24 hours in the fridge with salt water. Use about 50g of salt (sea salt is best if on hand) per 1 liter of water and make sure the salt is fully dissolved in the water.

Free-Range Whole Turkey Recipe Instructions

Defrost the turkey in the fridge for at least 36h. Use a bowl or tray.

This free-range turkey is not pre-brined. Brine the turkey for extra juiciness, tenderness and flavor. All you need is sea salt and water. Add herbs of your liking. We use fresh thyme leaves and lemon slices. Add cold water until the turkey is submerged.

Place the container in the fridge and allow the turkey to brine for 24h.

After brining, dispose of the water and make sure there is no liquid left within the cavity of the turkey. Feel free to stuff the turkey with anything from seasonings, seasoning mixes, or simply seasonal apples and lemons. We recommend non-chemically sprayed organic produce.

Use organic salted butter sticks and carefully insert them under the breast skin for super juicy meat.

Preheat the oven to 180 degrees Celsius, the expected cooking time is 90 minutes.

After 60 minutes, check the core temperature with a meat thermometer by inserting it into the thickest part of the breast. Keep the turkey in the oven until the core temperature of the turkey breast reaches 70 degrees C.

Remove from the oven and garnish with seasonal fruits such as apples, persimmon, grapes, and oranges.

I followed the recipe that was provided by Horizon Farms and the turkey was delicious! The outside was crispy and the inside was juicy. I usually can’t cook a turkey well, but because this is a quality turkey, it wasn’t dry, despite my lack of cooking skills.
Whether you are a seasoned cook or have never tried to make one at home, I recommend this turkey!!

For both, roast meat and Japanese food

Translated from Japanese: If you try to buy turkey in Japan, you will end up with either pre-seasoned (also used with chemical seasonings) frozen turkey from the United States or smoked turkey that has already been seasoned. Unseasoned, organic turkey is valuable only in the United States during the Thanksgiving season. It's amazing that you can buy it all year round in Japan now.
If you put the whole turkey in the refrigerator for about a day, it will loosen enough to insert a knife, so you can remove both wings and legs, zip lock each and return them to the freezer, and split the breast meat in two. The roast is delicious, but the soup made with it is excellent, too. It has a thick and strong flavor, so it’s perfect for Japanese food and as a base for soba soup or soup stock for root vegetable soup.
