Start Sear: The temperature to change from low/medium cooking to high heat sear.

Carry-Over: The temperature to take the steak off the heat.

Ideal Result: The ideal temperature the steak reaches after resting time.


Reverse Sear Steaks

There are dozens of recommended cooking methods for the perfect steak out there and none of them are wrong.

We recommend the reverse sear method for our Morgan Ranch steaks. This means slowly cooking the steak to the correct temperature and finishing it off with a hot sear, the result is a beautifully, evenly cooked steak with a crust to die for.
