Taken from the sirloin, this French cut gives the roast an exceptionally soft and sweet flavor. The culotte (or coulette) roast is also known as the Picanha in Brazil or Rump Cap/Ichibo in Japan. Since our Morgan Ranch culotte roast is bit leaner and close trimmed in its makeup, its subtle, pleasant flavor makes it great for serving either carved as medallion steaks or whole as a grill roast.
This cut is the epitome of smoothness and richness. A mild to medium-bodied Merlot or Chianti perfectly compliments this profound cut.

The Morgans control all stages of production themselves: rearing, calving, selection and classification, feeding, transport, supervision of harvesting and meat production, packaging, shipping and export to Japan. This way the Morgans make sure that their meat is always of the highest quality. Before export, the beef matures for 30 days and is then flash frozen to protect the aroma.
