These cheeses are individually quick-frozen (IQF) while still moist so that they remain beautifully white and soft after defrosting, and for convenience to allow you to use only what you need, when you need it. When defrosting, transfer the necessary portion to a plate or other dish and let it thaw naturally for about 30 minutes to an hour before using. We do not recommend thawing in the refrigerator for an extended period of time, as it will damage the quality of the product.
