How is maple syrup made? Pure maple syrup is made by concentrating the slightly sweet sap of the sugar maple tree. A tree-friendly spout is tapped into the tree and when the temperature rises above freezing, the sap flows through the spout and is collected. Next, through a process of heating and evaporation, the sap is concentrated and you get pure maple syrup. Sap for Maple syrup can only be harvested in the late winter and early spring before trees start to bud and produce leaves. It takes about 40 liters of sap to make 1 liter of maple syrup!
Is certified organic better? Generally, maple syrup is produced from wild maple trees that are over 40 years old- there is no reason to chemically fertilize the soil or use services or pesticides in a perfectly synched wild environment. Most sugarmakers simply do not have the resources or see any benefits in applying for organic standards. Our certified organic maple syrup simply reassures and certifies that the maple syrup has been responsibly and sustainably produced to very strict organic standards - this goes for the processing part as well.
How to store maple syrup? As long as the bottle is sealed you can store the bottle outside the fridge under room temperatures. Once the bottle has been opened the fridge is the only place you should store maple syrup.
How to serve maple syrup? The colder the syrup is the thicker it will get. We always recommend serving maple syrup chilled for texture and thickness most people expect. The warmer the syrup is served the more liquid it will become.
