Lamb Rack Recipe Instructions

Australian Lamb Rack

Completely defrost the rack in the fridge overnight. Open the pack and pat dry with a paper towel. Allow the rack to breathe and come to room temperature.

Season with olive oil freshly ground coarse black pepper and coarse sea salt, and garlic powder. That's it. Or use our original natural seasoning spice.

This lamb rack comes with a fat layer on top (cap on) - this layer is very important as it provides all the juices and flavor during cooking. Preheat the fry-pan or skillet to high heat and add a bit of olive oil - you need to hear it sizzle. Place the lamb rack fat side down so that the fat is cooked first and rendered into a liquid packed with flavor.

The goal is not to cook the lamb rack in the fry pan or skillet. We only want to sear that fat cap. Take the rack off the heat and place it on an oven tray or oven rack. Cook for 46 minutes at 180 degrees Celsius (350 degrees Fahrenheit) until crispy brown.

Translated from Japanese: I bought this whole chicken because I wanted to get soup stock out of the bones. I don't know how to cook many dishes, so I chose my favorite mizutaki.
Since the breeding period is long, I expected it to be old, but the taste is refreshing and the body is soft.

To prepare it carefully, I washed it, but even so, there was no fat or blood on the chicken.
