Sweetbreads are offal meat and come from the thymus gland and pancreas. Also known as "ris d'agneau". Whenever meat has fancy French names you know you'll find it in fancy restaurants. This is true for the lamb sweetbread. Sweetbreads are considered a delicatessen. The texture is very smooth, tender, and moist, and the flavor is quite mild and creamy. The outside crisps up easily, and they go well with both rich and more acidic sauces. If you’ve never had sweetbreads before, give them a try.
