A small pack 450g (1lbs) of lamb sweetbreads. There are more than a dozen sweetbread nuggets in one pack. The finest New Zealand quality - you will notice that there is no unpleasant odor. Sweetbreads are offal meat and come from the thymus gland and pancreas. Also known as "ris d'agneau". Whenever meat has fancy French names you know you'll find it in fancy restaurants. This is true for the lamb sweetbread. Sweetbreads are considered a delicatessen. The texture is very smooth, tender, and moist, and the flavor is quite mild and creamy. The outside crisps up easily, and they go well with both rich and more acidic sauces. If you’ve never had sweetbreads before, give them a try. 

Using the whole animal is a practice that is still common in many countries around the world and is gaining momentum within the (health) conscious carnivore community.
