Wild-caught skin-on Barracouta fillets from New Zealand. They have a firm texture and pearly white flesh that holds together well when cooked. Barracouta has dark flesh that whitens on cooking with medium moisture, and medium to low-fat content, it is most often prepared by grilling, frying, or smoking. Barracouta has a very distinctive taste and is also very suitable for smoking and canning. 

Each pack weighs 750g (1.65lbs.) and contains around 5 individual fillets. The fish fillets come individually quick-frozen in a resealable bag for convenience. Simply remove the number of fillets you need to defrost and cook from the bag at any time.

All fish are caught in New Zealand waters by the Talley's fishery which employs New Zealand fishermen. All catches are monitored and managed by the New Zealand Ministry for Primary Industries using government-regulated quotas to meet sustainability requirements. The fish is caught, processed, frozen, and packed in New Zealand only. We directly import the frozen fish to Japan from New Zealand and no further processing or repackaging is done locally. This way we can guarantee 100% traceability.

Truly different

We bought 10 of these for our garden party last week and each and every person was truly amazed by the quality and the taste. Our chef cooked them to medium and we used your Italian salt. Almost too good to give them to the kids!! We grilled the burgers for them anywy - they were exceptional as well - bravo! This meat is soft

Translated from Japanese: While wondering if this had been a waste of money, I grilled it for a BBQ. I put it on the grill and topped it off with the sea salt that is sold here as well. After adding some pepper as well, I grilled it on low heat. Once the entire meat had changed its color, I broiled it right in the middle of the grill on the highest heat. When I cut it into pieces it was perfectly medium-rare. I thought it was an exaggeration that you can even cut it with chopsticks, but it was really soft enough to work. When you chew the meat the delicious taste spreads in your mouth bit by bit. At first, I thought the meat is expensive, but now I agree (with the price). Although I didn’t grill it in a frypan, I think it was good I gave the BBQ grill a try.

これは柔らかい

もったいないかなと思いつつ、思い切ってBBQで焼いてみる。合わせ焼き網ではさんで、ここで売ってたシーソルトを大粒のままパラパラ。胡椒をかけて炭火の弱いところからジワジワ。で、全体に色が変わったところで、真ん中の高温で炙り焼き!切るときれいなミディアム・レア。箸でも切れるっていうのは大げさだなと思ったが、でも確かに柔らかい。噛むと肉の旨味がじんわりでてくる。高い肉だと思ったが、これは納得。今回はフライパンでは焼かなかったが、思い切ってBBQで焼いてみると良いと思う。
