Half a wheel of about 170g (5.9oz.) of 100% hand-crafted, all-natural milk cheese made locally in Okinawa by an Englishman known as the "Cheese Guy". There are two varieties that we are offering: "fresh basil" and "fresh". This is the "fresh" type that does not include local basil pesto. That is the only difference.
All cheeses are made in very small batches with milk from the local small dairy farm. All businesses are fully family-owned and operated - cheese made by cheesemongers who love what they are doing and by people who care! This is as good as cheese can get and how cheese should be. Never ever will you find this kind of artisan cheese at your regular supermarket.
Taste: This cheese is mild, creamy, and has a very rich and intensive milky yogurt after-taste that you will certainly love.
Texture: this cheese comes with a solid white mold, very similar to Camembert but slightly harder. Yes, the mold is actual cheese mold, please cut it off. Not suitable for consumption.
Quality: this cheese will knock you off your feet. This is a cheese you serve on that special Sunday breakfast with the whole family. But at the same time, this cheese is that kind of cheese that you hide from your children because they can't appreciate its value. This cheese has to be enjoyed. Slowly.
How to eat: The cheese comes in a whole small wheel. Cut out a small wedge and then slice that wedge into thin slices. Eat like this or on a toasted baguette. Goes very well with olives, salad and of course meat!
How to store: The cheese comes frozen in a vacuumed package. Keep frozen. Once defrosted and the outer protective mold layer has been cut into, make sure to consume within a few days. The outside mold protective layer is not suitable for consumption.
