BAP-certified, red seabream fish frames from Ehime, Japan. Each pack contains one half of the fish head and one piece of body bones, left over after fileting but too good to waste, with a total of 300g (10.5oz). Fresh frozen and vacuum packed within 30 minutes of processing - meaning they are incredibly fresh.
This product is recommended for making simmered dishes and bone broth, but can also be braised or grilled. When used to make broth, it yields a refined and flavorful soup with a rich savory taste. Due to its freshness, the deep flavor of seabream can be enjoyed without overwhelming fishiness. However, if you do find the fish odor to be too strong or the natural texture to be too slimy, we recommend sprinkling with salt and blanching briefly before full preparation.
This product is made of the head and bones of red seabream. We also offer sashimi-grade fillet cuts of the same fish.

This seabream is sustainably farmed in the clean waters of Ehime prefecture without the use of antibiotics. During feeding, a blower is used to spread the feed over a wide area to prevent the fish from colliding with each other, therefore creating a stress-free environment. After collection, the fish are chilled immediately after being transported to the processing facility only 5 minutes from the shores. Cut and vacuum sealed within 30 minutes to ensure maximum freshness.
Farmed in an environmentally friendly manner and has received the 2-star BAP (Best Aquaculture Practice) certification, which is given to marine products that are produced with strict environmental guidelines. The fish are not bred, rather the farming is all done naturally the preserve biodiversity. The farming area is a part of the "Kuroshio Current" which flows into the inland sea creating a nutrient-rich and oxygen-rich aquaculture fishing ground that is ideal for sea bream farming.
