One bottle of certified JAS organic plum vinegar from Gunma, Japan. Each bottle contains 180ml (6oz) of vinegar from plums that have been carefully cultivated by a family farm with over a century in the plum business. Plum vinegar is an extract produced when making "umeboshi" pickled plums. The extract contains citric acid from the organic plums, offering wonderful acidity to use as vinegar in a variety of dishes.
Grass is cultivated around the base of the plum trees, improving the activity of microbes in the soil and improving both the health of the trees and quality of the fruits. Biochar from plum branches is employed alongside this method, further enriching the soil for an ideal growing environment. Sustainable practices are always encouraged, as seen in the glass greenhouses and solar power employed by the farmers to reduce plastic waste and reduce the carbon footprint by running a self-sustaining farm.
This plum vinegar is made from just organic plums and all-natural salt. Just a splash of this delicious vinegar is enough to impart brightness of flavor and a hint of plum to your dishes. Since this can be used in lieu of other vinegars, the potential uses are endless. Sautee pork with it for sweet and sour pork, or steep your favorite veggies in it for amazing pickles. This vinegar opens up a whole new world of flavor possibilities. Other uses include as a dipping sauce for hot pot dishes, or mixed into hot water or seltzer for a refreshing drink before bed.
What is Biochar?
Biochar is charcoal made from burning organic matter for a short time in a low-oxygen environment. When mixed into the soil, carbon is retained for a long period which inhibits the release or greenhouse gases. Tiny holes in the charcoal are also believed to provide a home for micro organisms that develop and nurture richly fertile soil. Biochar has been recognized as an environmentally and humanity-friendly soil improvement material by the Japanese Ministry of Agriculture, Forestry, & Fisheries.

Yuasa Farm, which produces and processes these plums, has over a century of history growing plums at the foot of Mount Haruna in Gunma Prefecture. With sustainability in mind, the farm is committed to using as much natural energy as possible. Solar energy is used to run vehicles and farm machinery, and glass greenhouses are used for drying plums in the sun, thereby reducing the generation of plastic waste. Extra plum branches are burned heating and hot water, and are also processed into biochar to improve the soil on the farm. The producers continue to deliver delicious, high-quality plums and plum products through farming that is friendly to both nature and people.
