The long rearing period and active, free-range lifestyle develop firm texture and a rich taste that's full of natural umami. This neck portion offers both meat and bone for deep, satisfying flavor that can enrich any dish. When simmered, the bone releases rich, clear broth with with a clean, refined depth unique to jidori chicken.
