What are the best before dates?
Each product comes with its own label and expiration date. The expiration is written in Japanese: 賞味期限 (shou-mi-ki-gen) and the format is yyyy/mm/dd.

How does temperature-controlled delivery work?
Products remain at their appropriate temperature from our door to yours. Until what temperature can I sous vide the meat in its own packaging?
Our packaging is sous-vide ready (the process of cooking meat in its packaging in hot water for a prolonged time) for water temperatures up to 95°C (200°F). We do not recommend temperatures close to the boiling point but temperatures around 60°C (140°F) with a cooking period between 45 minutes and 3 hours, depending on the type and thickness of the meat.

The color of the meat may differ slightly from the picture depending on the time of the year and it may be more of a dark red as shown in one of the pictures. Rest assured there are no problems with the quality, taste, or safety of the meat as it's freshly imported and processed in Japan.

300g (10.5oz.) of flavorful thin 2mm slices perfectly made for Sukiyaki or that Philly cheese sandwich you have been craving. The cut comes either from the shoulder loin (chuck) or the round. Compared to our brisket slices these are richer in flavor, more tender, and have a higher red meat ratio. The finest grass-fed premium beef.
