Boneless rib fingers, also called kalbi, are cut from between the ribs of the deer. Since only a small amount is available per animal, they are a rare cut that's not commonly available. As seen in the photos, these cuts contain some white connective tissue which is tender, flavorful, and easy to chew. This does not need to be removed, and can rather be enjoyed by seasoning simply with salt and pepper. This cut is perfect for adding some variety to your yakiniku BBQ repertoire, or as a savory pairing with your favorite drink. Since the texture can vary from deer to deer, if the connective tissue feels too thick, we recommend cutting into smaller pieces for enjoyable bite-sized pieces.
