Each pack contains 2 slabs of the finest New Zealand lamb spare ribs. Spare ribs come from the belly section and are therefore tougher than lamb chops or tenderloin filets. We do not recommend these for the grill or the fry-pan but rather for slow-cooking. Slow-cooking them long enough will make these spare-ribs extremely tender falling off the bone - extremely flavorful and worth the long(er) cooking time. The fat cap will render beautifully during the prolonged cooking process providing the spare ribs with extra juiciness and succulent flavor. Before cooking, you will have to cut the slab into individual ribs. For that, we recommend using a large and sharp knife. Do not season excessively - high-quality lamb does not come with gamey flavor or odors. All you need is salt, pepper, garlic powder, and olive oil.
