Please note that some of the thinner cuts may not include a bone.
300g (10.5oz) of the finest New Zealand lamb spare ribs. Spare ribs come from the belly section and are therefore chewier. We don't recommend these for the grill or the frying pan but rather for slow-cooking. Slow-cooking them long enough will make these spare-ribs fall-off-the-bone tender and extremely flavorful, well worth the longer cooking time. The fat will render beautifully during the prolonged cooking process providing the spare ribs with extra juiciness and succulent flavor. These are already pre-cut, so no need to cut the slab into individual ribs. High-quality lamb doesn't come with gamey flavor or odors, so all you need is a light seasoning of salt, pepper, garlic powder, and olive oil.
