Until what temperature can I sous vide the meat in their own packaging?
Our packaging is sous-vide ready (the process of cooking meat in their packaging in hot water for a prolonged time) for water temperatures up to 95°C (200°F). We do not recommend temperatures close to the boiling point but temperatures around 60°C (140°F) with a cooking period between 45 minutes and 3 hours, depending on the type and thickness of the meat.

Just when I was about to give up, I found this new product called "skin-on pork belly block"! The quality of the pork is the same as always: no hormones, no antibiotics, and no genetically modified feed. I was looking for skin-on pork block with high safety, so I didn’t hesitate to buy it. The recent food and energy situation may cause the prices to go up even more, so now may be the best time to buy it? The only domestic skin-on pork blocks I know are distributed in Okinawa Prefecture and in restaurants specializing in Okinawan cuisine, and it’s too big to handle as it is (around 4 kg), and the skin-on pork blocks sold at restaurants for foreigners living in Japan are imported meat from countries with insecure breeding environments.
