These premium chicken bones come from Ginzan Akadori, a traditional jidori breed raised free-range in the lush natural surroundings of Shimane Prefecture, Japan. Jidori refers to high-quality Japanese chicken raised according to strict JAS standards for breed, growth period, and rearing environment. Each 300g (10.5oz.) pack contains an assortment of bones ideal for making rich, flavorful stocks and broths. Unlike conventional broiler chickens, which are typically raised in around 50 days, Ginzan Akadori chickens are slow-grown for 120 to 150 days, allowing their meat and bones to develop exceptional depth of flavor and natural umami. They are raised without growth hormones or preventative antibiotics and fed a custom fermented diet, with a strong focus on animal welfare, quality, and sustainable farming practices.
The long rearing period and active, free-range lifestyle help produce a clean, clear broth with deep jidori flavor. These bones are ideal for ramen, hot pot, soup, takikomi rice, stews, and other simmered dishes. We recommend using a pressure cooker to shorten cooking time. Slowly simmer the bones to draw out concentrated umami and collagen for a rich, full-bodied chicken broth.
