Chinook Salmon (also known as King Salmon) are the largest Pacific salmon species, known for their deep red-orange color and higher fat content that gives them a rich flavor and smooth texture. This fat content keeps the meat nice and tender even through the hot smoking process. Boasting a wonderfully balanced sweet and smoky flavor, this salmon can be enjoyed on its own or as part of a seafood platter. If you're looking for a luxurious appetizer, try mixing diced cuts with cream cheese, dill, red onions, and fresh squeezed lemon juice for an amazing salmon dip to spread on your favorite bread or crackers.

This salmon is produced by Tsu-ma-uss Seafoods, a fishery made up of representatives from the Hupacasath and Tseshaht First Nations. Exercising their aboriginal rights, they follow the seasonal runs of salmon to sustainably and responsibly gather highly sought after, top-quality fish. Using traditional net fishing methods, they harvest only salmon that are surplus to the spawning requirements of the local bodies of water, ensuring the health of the ecosystem and a perennial supply of high-quality seafood for generations to come.
