Choose options
This garlic comes with the skin on, but some pieces may be missing the outer skin. Please rest assured there is no issue of safety or quality.
One 80g (2.8oz) pack of certified organic black garlic cloves from Japan. These cloves are aged and fermented for four weeks, developing a soft texture and slightly sweet flavor that can be enjoyed even as a snack. This garlic is cultivated with handmade organic fertilizer prepared by the farmers themselves. No chemical pesticides are used, rather the soil and crops are protected from disease by natural probiotics including lactic acid bacteria and Bacillus bacteria. Absolutely no preservatives or any other additives.
This all-natural garlic can be enjoyed as is, simply peel the skin off and enjoy the pitch black clove inside. With a smooth texture and mellow sweetness blended with the characteristic garlic aroma, this product provides a wonderful new culinary experience for garlic lovers. Black garlic can also be used for cooking, but we recommend enjoying raw to preserve the many heat-sensitive nutrients. This garlic remains soft to the core even when frozen, allowing for convenient storage and a snack that can be enjoyed straight out of the freezer. This can also be added to cold dishes and condiments like salads, dressings, and dips for immediate depth of flavor. Please note that overconsumption of garlic can cause heartburn or indigestion, so we recommend consuming in moderation - about 1 or 2 cloves per day.
What is Black Garlic?
Black garlic is created by aging raw white garlic under carefully controlled temperature and humidity conditions. During the fermentation process, the garlic undergoes a Maillard reaction between amino acids and sugars which turns the garlic's color black. This reaction also softens the texture and transforms the flavor from strong and sharp to mild, sweet, and tangy - similar to dried fruit. This fermentation also enhances the nutritional value, increasing levels of beneficial compounds like S-allyl cysteine (SAC). SAC is known for health benefits such as fatigue recovery, antioxidant effects, and sleep improvement. Black garlic is also rich in other nutrients like arginine, proline, polyphenols (antioxidants), and GABA, all of which contribute to beauty and health.
We also offer traditional garlic from this same producer.
About Certified Organic
This product is certified Japan Agricultural Standard Organic (JAS). Japan has one of the world's strictest organic certification standards. But what does certified organic mean when it comes to fruits and vegetables?
✔ Strictly tested for E Coli, coliforms, molds, yeasts as well as listeria and salmonella and therefore meets very high microbiological safety standards.
✔ Free of harmful synthetic chemical inputs such as fertilizer, pesticides or any food additives.
✔ Free of genetically modified seeds (non-GMO)
✔ The farmland and soil in use are free of any chemical treatments.
✔ Organic produce is heavily regulated. Producers and importers are checked and inspected by governmental bodies or certified third parties. Organic certification requires detailed bookkeeping and documentation for 100% traceability. "Certified organic" is a protected phrase and the use is legally restricted.
✔ Organic farming is more sustainable when it comes to holistic food production. The lack of harmful pesticides is better for the environment.
✔ Organic produce comes mostly from family-owned farms that own smaller acres of organic land.
It is also important to mention that organic produce is more cost-intensive. Organic farming has lower yields compared to conventional farming and is oftentimes more labor-intensive as well. Additionally, organic certification and audits require annual fees for producers, exporters, and importers resulting in higher prices for the end consumers.
Please note that non-GMO and chemical-free produce will often have a minor degree of defects; these may include individual differences like slight deformities, discoloration, and under/over ripeness. In rare cases there may be insect damage, scratches, or mold which cannot be seen during inspections. However, these are not harmful and can simply be removed. Thank you for your understanding.

This garlic is produced by Share Garden, organic farmers in Chiba, Japan whose goal is to "cultivate safe and worry-free vegetables for our loved ones." They specialize in soil preparation using organic rice bran, plant compost, and hand-made "bokashi" fertilizer, with a goal of practicing and promoting organic farming in their local area. They continuously fertilize the soil with organic matter suited to the specific season and crop that they are cultivating. This approach maximizes the natural power of plants and supports an agricultural ideology that is in harmony with the environment.
