The octopus is boiled until medium-rare just after it's caught, and then flash-frozen to preserve freshness and quality. Although giant Pacific octopus fishing numbers have been declining over the years, the producer of this product, Mr. Ogasawara, has established strict resource management rules to ensure that the business can continue for the next 100 years. His ideas and rules for sustainability are shared with local fishermen to promote widespread sustainability in octopus catching.

About Hokkaido Octopus
This octopus comes from an area of Japan's northern island, Hokkaido, known as Tomamae town. Tomamae is well known for its prime fishing area. It is also known for strong winds, strong enough that renewable wind energy has allowed the town to achieve a self-sufficiency rate of 500%.
Mr. Osagawara, who supplies this octopus, has established a set of rules for sustainable fishing with the intention of preserving the sea creatures in a way that will allow his rural fishing community to still be catching them 100 years in the future. Having shared his vision with other fishermen, they now record weight, size, and quantity of all the octopus they catch, as well as the number of workdays and lost fishing gear. If the population of octopus ever falls below the established threshold, they will halt operation until the population is restored. Under project name ReTAKO, fishermen all around Tomamae follow these guidelines for safe and sustainable octopus fishing.
