Until what temperature can I sous vide the meat in their own packaging?
Our packaging is sous-vide ready (the process of cooking meat in their packaging in hot water for a prolonged time) for water temperatures up to 95°C (200°F). We do not recommend temperatures close to the boiling point but temperatures around 60°C (140°F) with a cooking period between 45 minutes and 3 hours, depending on the type and thickness of the meat.

The milk used for this cheese comes from Italian dairy cows raised on non-GMO feed that are not treated with growth-promoting hormones or antibiotics except for therapeutic purposes, and is made with only pasteurized cow' milk and salt, without any additives. The cheese is cellulose-free, preservative-free, sweetener-free, colorant-free, flavoring-free, and free of any food additives. The small dices are individually quick frozen (IQF) for convenience so you never have to worry about the expiration date again. Simply use the portion you need - whenever you want. Once removed from the freezer the dices defrost within minutes. The gorgonzola dices are very versatile and can be used for salads, pasta, pizza, burger toppings, or desserts. This Gorgonzola is aged for 100 days which makes it the Gorgonzola Picante type. Handcrafted, and carefully cut into dices in Italy. Blue-veined, creamy, rich with a bold flavor.

Gorgonzola cheese is protected by the designation of origin (DPO) which means it can only be called and sold as Gorgonzola if it was produced according to a strict traditional recipe and method in specific regions of Italy using only milk from those specific regions. Tasty and versatile

These frozen bits are easily portioned into any amount to accent sauces, pastas, salads and baked items with the deliciously sharp and distinctive flavor of fresh Gorgonzola. I use them routinely in my cooking — what a great way to jazz up the classic mac-and-cheese recipe, for instance! As my supply dwindles, I pack the remainder in a smaller freezer-safe container until it’s time to order again. ☺️
