The crumbles are individually quick frozen (IQF) - a freezing technology that preserves the freshness of the cheese and prevents the formation of large water crystals and thus preserving the natural gorgonzola taste and authentic structure as well as the nutritional contents, including all the good vitamins and minerals.
The milk used for producing the gorgonzola cheese is sourced from small family-owned dairy farms in rural Italy. The dairy cows are fed hay and regularly graze on open pastures. Cows in Europe are not treated with growth hormones and are not subject to the subtherapeutic use of antibiotics.
