Introducing Certified JAS Organic raw soy sauce malt in a convenient 170g (5.9oz) pack. Soy Sauce "Koji" Malt is made from a mixture of organic rice malt (koji), natural sea salt, and organic soy sauce which is then further fermented to create a powerfully flavorful sauce/topping that can be used in a wide variety of applications. Unlike dried soy sauce malt, this raw type boasts a higher level of fermentation. With meticulously selected all-natural ingredients, you can be sure this additive-free raw soy sauce malt can be used with total peace of mind. Absolutely no artificial flavors, coloring, preservatives, or any other nasties.
This sauce is incredibly easy to use, and can be consumed as is. Preferred preparation methods include topping on rice, eggs, or natto beans. It can also be mixed with olive oil to make salad dressing or a grilled vegetable or fish marinade. The possibilities are endless, so feel free to use your imagination and enjoy it however you like. The enzymes in soy sauce malt break down carbs, proteins, and fiber, allowing for a better umami flavor. By marinating meat or fish before cooking, the natural meat flavor will be enhanced alongside the malt flavor, resulting in a fantastically delicious pairing. Soy sauce malt can also be used more sparingly than regular soy sauce, allowing for a reduction of salt intake.
Differences Between Soy Sauce Malt and Salted Rice Malt
Horizon Farms offers two kinds of certified organic malts: Raw Soy Sauce Malt as seen here and Raw Salted Rice Malt. Both products are used to draw out and accentuate umami flavors in your meals, but the ingredients and flavors are different. Salted rice malt is made by fermenting rice malt with sea salt and water and is ideal for highlighting the natural taste of a dish. Soy sauce malt uses the same fermenting process, but adds in soy sauce as well. This gives it a characteristic roasted soy sauce aroma and deep, sweet flavor. It is recommended for dishes where you want to enhance the flavor with the distinct taste of soy sauce.
