Horizon Farms proudly presents what is probably Japan's first all-natural, sugar-free, free-range, smoked pork bacon collection. This took us a year of experimenting and many costly batches. This is the "Canadian" style bacon which is made from the pork loin as opposed to the "American" style bacon which is made from the pork belly.
This "Canadian" style bacon is cured for two weeks in an all-natural curing process using only natural spices. Absolutely no nitrates added, no curing salts, no celery. Then smoked for a duration of 2 hours using natural hickory smoke. Nope, no sugars ever. The result is amazingly good bacon that you can enjoy with the whole family.
We use the pork loin which has a great and balanced fat to meat ratio. The pork comes from Hokkaido which is free-range pork and completely free of growth hormones and antibiotics. We say it again: our bacon comes free of preservatives, additives, gluten, lactose, MSG, fillers, sugar, white sugar, brown sugar, honey powder, agave, turbinado sugar, nitrates, flavor or color enhancers, or any artificial ingredients or nasties, just family farm produced, ethically raised high-quality pork and top-quality natural spices from around the world. Each pack contains 300g worth of pre-sliced bacon. The thickness is 2mm which is your average bacon thickness used for burgers or breakfast. Cook on high heat without adding any oil in the frypan. Please let the bacon cook in its own juices, this is where all the flavor is. Due to the high-fat content, the slices will shrink in size and crisp up. Bathing in the nearby river during summer and playing around on the snowfields in winter - that's the happy life of the pigs on the family-owned El Paso Ranch in Hokkaido that are raised completely free-range in the Tokachi area. And when we say free range we mean the real deal free-range. Spring, summer, autumn and winter - 24 hours, all year free-roaming on 30 hectares (75 acres) of land. The pigs are a slow and naturally grown British Camborough breed. They are fed a large variety of feed mixes that contain all kinds of grains, corn, soybeans, and other vegetables and farm produce (pigs can’t survive only on grass, so there won't be grass-fed pork any time soon). Newborn stay in a shelter together with their mother until they learn how to take care of themselves. No tail clipping of piglets, no gestation crates for sows. No factory farming. Defrost the pack of bacon in a bowl of water (less than 1 hour) or in the fridge overnight.
One pack is enough for 4 persons. Once opened you can leave the pack in the fridge for up to 2 more days. Please do not refreeze again for quality reasons.
Prepare a frying-pan to high heat and place the bacon slices without additional oil or butter into the frying pan.
Even though leaner than the "American" style bacon which is made from the pork belly, the pork loin also has relatively high-fat content and it will show during cooking. The bacon will also shrink in size and become crispy. The juices that run out are full of flavor. Cook the next slices in the same juices for flavorful bacon.
Take off the bacon from the heat once crispy brown. The more you cook it the more crispy it becomes. We recommend not cooking them for too long.
Serve for a full breakfast, as a burger topping or in your salad.
